An evening with Celebrity Chef Matt Tebbutt and Cocktail & Spirits Expert Carmen O'Neal

This September, we are bringing something truly special to Cork. On Wednesday, 10th September 2025, The Montenotte will play host to an unforgettable evening of fine dining, creative cocktails, and exceptional entertainment, led by none other than celebrity chef and TV presenter Matt Tebbutt and cocktail & spirits expert Carmen O’Neal.

For one night only, Matt and Carmen will join our Executive Head Chef Martin Lovell to create a bespoke menu and cocktail pairing that celebrates the very best of the season. Every course will be carefully matched to one of Carmen’s exquisite cocktails, offering guests a dining experience that is as innovative as it is indulgent.

 

The Experience

Your evening will begin in The Glasshouse, our stylish rooftop bar with panoramic views over Cork. Carmen will welcome you with her Terrace Bloom — a sparkling, floral apéritif inspired by The Montenotte’s own gardens — paired with elegant seasonal canapés such as spiced crab and fennel & apple crispbreads.

From there, you will be invited into The Gallery Suite for an intimate three-course dinner. Expect dishes such as:

  • Cured Local Duck Breast with bitter leaf salad, pickled mushrooms, and charred pear & cider vinaigrette, paired with the Autumn Verjus cocktail — light, orchard-fruity, and delicately herbal.
  • Roast Turbot with mussel and butter sauce, potato polenta, seaweed pancake, sautéed samphire, and burnt lemon oil, complemented by Salt & Smoke, a smoky martini-style drink with a bright citrus finish.
  • Spiced Apple Tarte Tatin with buttermilk and hazelnut ice cream, perfectly matched with a Clarified Apple & Irish Whiskey Milk Punch — a smooth, warming finale to the evening.

Throughout the night, Matt and Carmen will share the stories, inspirations, and creative processes behind each pairing, bringing guests behind the scenes of their culinary and mixology mastery.

 

Behind the Menu

Having presented a number of renowned TV shows, Matt Tebbutt’s culinary experience is truly impressive. With a background starting as a trainee for Marco Pierre White, after graduating from Leiths – one of London’s most prestigious culinary schools – Matt eventually worked his way to winning AA Restaurant of the Year at The Foxhunter which he transformed into an acclaimed restaurant, before entering his career in television. Often seen accompanying Matt on Saturday Kitchen, as the resident cocktail expert, is Carmen O’Neal. As the founder of 58 and CO, the first female led alcohol brand to receive a B-Corp certification, Carmen’s beverage expertise is unparalleled. Her London-based distillery leads events, masterclasses and speaking engagements focused on ethical business, sustainability and mixology. Carmen’s award-winning mixology accompanied Matt’s expertly curated dining menu will combine to make the perfect evening of entertainment and elegant dining.
