In an interview with Image, our new Executive Chef, Martin shares his vast experience, love of food and what to expect from Panoramas new menus.
He began his culinary journey in Limerick and Dublin before spending 8 years in New York’s high end restaurants. He then returned home and began cooking in premier hotels before opening his award winning restaurant in Tipperary, Prime 74.
Martin noted how integral good food was in his earlier life and that it shapes his passion into his career. “Cooking has always felt natural to me” – he grew up surrounded by chefs and going down that route felt instinctual.
He then goes on to share his favourites, nationally and globally.
Finishing off the interview with what perfects the dining experience for him, passion and storytelling. At Panorama, he is creating a menu that balances creativity and comfort.
